Stars & Lavender by JINELLYCAKES

We had 2 birthday clients here at Jinellycakes this week. After creating the Iron Man theme for a little boy, I created a girlier theme for a young lady celebrating 11 years! Her favorite color is lavender and she loves stars, so I incorporated both in her design. She ordered vanilla, chooclate and red velvet for her classmates and teachers at school, so that she could celebrate her birthday during lunch. The best part for me, was when she called to tell me how much she and all her friends loved the cupcakes and that chocolate was her favorite! Have a look at this special girls birthday cupcakes:

Iron Man Cupcakes by JINELLYCAKES


This week I had the pleasure of creating IRON MAN themed cupcakes for a little boys birthday.
His mom ordered them so that he could celebrate his birthday at school with his classmates and teachers.

Cupcakes are perfect for the classroom setting because no knife is
required, and there's less cleanup - no forks or plates to throw away!

Happy Valentines Day + an update on nationwide shipping

Happy Valentines Day everyone!

Although nationwide shipping isn't technically available as yet, I had to make an exception for a lovely aquaintance that needed a Valentines Day order shipped to Washington DC. Not only was I able to have cupcakes at her doorstep, this was a great opportunity to test out the process and get some feedback. For now I've decided to ship the cupcakes un-frosted with the frosting in a seperate container in fear that the cupcakes would look like a disaster upon arrival...

Our packaging is very simple, clean and fresh!

Jinellycakes presents...CHOCOLATE LOVER


If you're anything like me - you live and breathe chocolate! I can't really put my love of chocolate into words, but I created in this cupcake, appropriately called "THE CHOCOLATE LOVER"! It's moist chocolate cake topped in rich chocolate ganache. Biting into this cupcake is euphoric! There's no other way to describe it. To be honest, I've eaten quite a few of these this weekend since I had a bunch left from the shoot...and I don't feel bad about it, lol.

taste testing: SMORES CUPCAKE

Most of these days are spent perfecting the menu for Jinellycakes!


Smores is one of my favorites! Sure it looks harmless, but this cupcake is packing chocolate, marshmellow and graham crackers on the inside - just like smores you'd make by the fire!

special delivery: Packaging Shipment #1

A moment reminiscent of Christmas morning: We've received our first shipment
containing packaging supplies for Jinellycakes - very exciting!

When it came to choosing packaging for the products, I tried to be as
enviornmentally concious as possible:


The twine is 100% cotton + Bio-degradable


Our spoons are made from farmed birch trees which are constantly
being replaced in the area, is biodegradable in under 6 months and
 doesn't contain any glazes, bleaches or dyes!


What am I most excited about? The frosting tips! :)

the story of JINELLYCAKES.

As a child, I always looked forward to Sunday mornings. Without fail, it was one day of the week that I would wake up to the aroma of freshly baked cake - a different one each week. My mom loved to bake and was known for the elaborate cake decorating skills and attention to detail. In addition to baking every Sunday, she would make outrageous cakes for my birthday that I always looked forward to!

Throughout my childhood spent in Jamaica, we also frequented a local bakery called Sugar & Spice where I would paste my face against the glass case and stare at the cupcakes. The frosting was always Blue or Orange to coincide with the color of the establishment - mom always got me vanilla.

Despite the fact that I always loved pastries, my mom is a talented baker and all the women in my family are amazing cooks - I never took an interest in being in the kitchen, instead I would bury myself in school work. I was the kid who would tell my mom that I would learn, only wait for my Que to lick the batter and leave until everything was finished (sorry mom). I got use to playfully being made fun of by my entire family for not knowing my way around the kitchen, and that was fine with me :)

It wasn't until my wedding day that I made a joke during my vows to learn how to cook - a vow that my husband would remind me of everyday. So what did I choose for my first experiment in the kitchen? Cupcakes! Sure it would have been nice to learn how to cook a meal, but why? With my 8 year old sister in tow, I tried my hand at baking cupcakes from scratch...and it was a disaster! Not to be defeated, I got back in kitchen and finally saw some success.

Since this day, I've been addicted to baking cupcakes and the reactions I'd get from people who ate them. I would try different recipes every couple of days and family would devour them before I knew it. Soon I started getting yelled at if people would come over and I was out of cupcakes, lol. I decided to start a little cupcake business and was able to complete a couple orders, before I started working full time and focused all my energy on that instead. Much to the dismay of my loved ones, I no longer had the time or energy to bake.

A year later, I've put my company back together with more products and services - we're better than ever!

The name "Jinellycakes" comes from "Jin", the name my family calls me and "Nelly", a nickname given to me by my childhood friends.

On this blog I hope to share with you all the behind the scenes of Jinellycakes, updates, inspiration,  hopefully some successes and who knows...maybe the road to opening up my own storefront.
